Organic Vegan Apple Crumble

Apples are no doubt the most popular fruit of Autumn. After all, it is the season for apple picking, apple pies, and caramel apples. This fresh, crisp fruit has countless health benefits. They contain lots of fibre, Vitamins A and C, and pectin. Apples keep you full for a long time with few calories, are good for your immune system, and the pectin helps reduce cholesterol levels.

1 kg eating apples, peeled and chopped
3 tbsp. orange juice, freshly squeezed
1/2 tsp. ground mixed spice
1 tbsp. pure maple syrup

For the topping

125g plain flour
100g soya margarine
25g porridge oats
75g ground walnuts
1/4 tsp. dried stevia


Preheat oven to Gas 4.

Put the apples in a medium sized pan with the orange juice and mixed spice and cook on a low heat for 8-10 minutes until the apples begin to soften.

Remove the pan from the heat and stir in the maple syrup. Spoon into an oven proof dish.

To make the topping, tip all the ingredients for the topping into a processor and blitz several times until the mixture looks like fine bread crumbs.

Sprinkle over the apples and bake in the preheated oven for 20-25 minutes or until the top is golden and crisp.

Serve immediately with soya custard, or dairy free vanilla ice-cream.


If you use eating apples like Royal Gala instead of cooking apples, it means you can cut down on the amount of maple syrup you need to sweeten the fruit.
